Luscious melt-in-your-mouth chocolate and a sweet kiss of peppermint make this the ultimate kiss-friendly treat.
We turned to VegNews photographer and BitterSweet blogger Hannah Kaminsky for a last-minute Valentine's Day treat that's as sumptuous as it is pretty. The result: these luxurious Mint Chocolate Meltaways from her new cookbook Real Food, Really Fast. Made simply with five ingredients, these adorable confections come together in no time, so get cooking!
What You Need:
1 cup bittersweet chocolate chips
¼ cup coconut oil
¼ teaspoon peppermint extract
¼ teaspoon salt
½ cup crushed candy canes or peppermint hard candies
What You Do:
1. Into a microwave-safe bowl, place the chocolate chips and coconut oil, and heat for 30 to 90 seconds, stirring at every 30 second interval, until completely melted and smooth. Mix in the peppermint extract and salt.
2. Into a silicon ice-cube tray or candy molds, pour melted chocolate. Sprinkle crushed candy canes or peppermint candies over the top. Place into the coldest part of your freezer, and let sit for approximately 9 minutes (or until set). Unmold and serve at room temperature.
