Chilean Tech Startup's Vegan Mayo to Hit Walmart

The Not Company aims to launch its own eggless mayonnaise at Walmart, along with a host of new vegan products, by 2019.

Chile-based food technology startup The Not Company revealed last week its intent to launch a line of vegan products at United States Walmarts in 2019. The company’s first commercial product—an eggless mayonnaise called Not Mayo made with chickpeas, water, and salt—is currently available in select South American countries. “We want to change the way we make the food we love,” Not Company CEO Matias Muchnick told Business Insider, “rather than changing the food we love.” The company creates its plant-based products with the help of “Giuseppe,” a machine that analyses the properties of foods on a molecular level to learn which compounds can be used to replace animal products. The company—which is currently Chile’s third-largest mayonnaise producer—will launch Not Yoghurt, Not Milk, and Not Cheese through its current distribution network in the coming months.
